Increasing health issues coupled with declining food quality, degraded farmland and environmental quality as well as an increasingly tight hold on food production by corporations have inspired a growing movement.. a movement towards a more sustainable food system - a way to evolve towards an improved way of living - towards sustainable health and happiness for people and planet. This is an EatGreen Evolution.
If we are what we eat, understanding the complexities of how our food gets on our tables is vital to our health and environment. The EatGreen Evolution offers an overview of worldwide sustainability issues surrounding food production and consumption. A key issue addressed is the importance of local food production, particularly in urban areas, and the assessment of how locally produced food impacts the long-term sustainability of global food production. Participants gain the ability to compare chemical-intensive versus organic agriculture in terms of the ecological and economic impacts of both systems; understand the advantages and challenges of local food production, learn more about the "permaculture" movement, as well as their own personal relationship to environmental and economic sustainability; and evaluate the capabilities of urban agriculture for improving and sustaining of economically-distressed communities. Workshops, field trips and service days add to the learning components of this curriculum.
